Midwestern Pork Chop Dinner

6 pork rib chops, cut 3/4-inch thick
1 teaspoon vegetable oil
4 cups sliced, peeled potatoes, cut
1/4-inch thick
2 cups sliced carrots, cut 1/4-inch thick
2 cups sliced onions, cut 1/4-inch thick
1½ teaspoons salt
1/4 teaspoon pepper
2 cups milk

Heat oil in large skillet. Brown pork chops over medium high heat; season with salt and pepper. Combine potatoes, carrots, salt, and pepper; mix lightly. Place in 13 x 9-inch baking pan. Pour milk over potato mixture. Top with pork chops. Cover with foil. Bake at 350 degrees F. for 1 1/2 hours, until pork chops and vegetables are very tender. Servings: 6
