1-5 lb boneless pork loin roast, rolled and tied 1/4 cup water 3 Tbs Dijon-style mustard 2 Tbs oil 1 Tbs soy sauce Blend together the water, mustard, oil and soy sauce. Place roast in a shallow baking dish and pierce with a fork. Brush mustard and soy mixture over top of roast, cover and allow to set at for 1 hour. Drain meat; reserving sauce. Insert spit rod through the center of the roast. Place on grill over medium-hot coals. Grill until meat thermometer registers at least 170ºF. It should take approx. 2 1/2 hours. Baste roast during the last 30 minutes with reserved sauce. Sauce can be heated and served with the meat. |
