Golden Pineapple Pudding

1/2 c. self-rising flour
3 eggs
1/2 stick butter (not margarine), melted and cooled
1 tsp. vanilla
dash nutmeg
1 c. crushed pineapple in own juice, not drained
1 c. sugar
1 c. buttermilk

Grease a 1 1/2-quart shallow casserole. Spread pineapple in bottom. Beat rest of ingredients together just enough to mix well. Pour carefully over pineapple. Bake in 325 degree oven about 45 minutes. Will fall slightly when removed from oven. Makes 8 servings. Any cooked fruit could be used.
