Easy Sausage-Rice Casserole

2 packages Uncle Ben's rice mixes
(suggestion: broccoli & cheese or chicken with vegetables)
1 pound pork sausage (I like sage flavored)
1/2 cup finely chopped onion
2 cups grated cheddar cheese

Prepare the 2 rice mixes according to package directions EXCEPT add 1 more cup of water than is called for. While the rice is cooking, lightly brown the sausage and onion and drain well. Just before the rice finishes cooking, add the sausage/onion mixture. Pour into a 13 X 9 pan and top with grated cheese. Since the mixture is already hot, top with foil then set aside for the cheese to melt. Serve with salad and french bread and you have a quick and delicious meal.
